POTATO PUFFS

Ingredients:

°3 mashed potatoes (type Manon, Bintje, Estima…)

°butter

°pepper

°salt

°whipping cream 25 cl

°egg 3

Instructions:

STEP 1

Preheat the oven to thermostat 6/180°C.

Peel your potatoes and cut them into large wedges, then cook them over medium heat in a pan of salted water until they start to fall apart (about 20 min).

Separate the egg yolks from the whites and whisk your egg whites.

Bring whip cream to boil. Once the potatoes are cooked, pass them through a vegetable mill and incorporate the cream. Puree

In a bowl, mix the egg yolks with the apple puree

earthen. Using a wooden spatula, gently fold in the egg whites, gradually mixing them into the puree.

Butter the ramekins and fill them halfway with the purée so that they don’t overflow as they rise during cooking.

STEP 9

Place them in the oven for 35 minutes. Taste immediately.
